  • 2 packs of low-fat cottage cheese;
  • chicken egg;
  • 2 cup semolina;
  • a little sugar (remember, the less the better).

Prepare dietary cottage cheese according to the recipe:

  1. Stir the low-fat cottage cheese until the mass becomes homogeneous.
  2. Add a chicken egg to it, also stirring.
  3. Now we add semolina. But not all at once. According to this recipe, semolina is added one tablespoon at a time and mixed thoroughly. A striking example of such baking is cottage cheese pancakes in the oven with minimum quantity flour and cooked without semolina. We will prepare them in silicone molds; they hold their shape better and the baked goods do not burn in them.

These cheesecakes are best made from low-fat cottage cheese with minimal or no added sugar. You can sweeten cheesecakes with honey, but only after they have cooled.

To diversify the taste of cheesecakes from the oven, we suggest you add sweet berry puree to the middle.

Ingredients

  • 200 grams of low-fat cottage cheese;
  • 20 grams of sugar;
  • 30 grams of wheat flour;
  • 1 egg category C0;
  • berry puree for filling.

Preparation

Cooking cheesecakes in the oven not only saves your time, but also protects your figure, because you don’t need to fry the cheesecakes in oil. You can bake cheesecakes both in silicone molds and in small ceramic molds.

Let's start cooking. Place sugar in a bowl and break the egg.

Stir them together until the sugar dissolves. If you don't use sugar, just beat the egg. You can add vanillin or vanilla sugar.

Now add cottage cheese to the egg. There is no need to grind market cottage cheese through a sieve. It is quite fatty and viscous. But if you use low-fat cottage cheese, then grind it through a sieve. This way, dietary cheesecakes will turn out to be delicate in structure, and there will be no grains in them.

Mix cottage cheese with egg. You can use a blender, fork, whisk.

Add flour last. There is only 30 grams of it in the recipe. From this amount of products you get 6-8 cheesecakes. So for each cheesecake there is no more than 5 grams of flour. Stir the dough, it turns out not stiff, but like thick sour cream.

It's time to put the dough into the molds. Lubricate silicone molds There is no need to do this first, but the ceramic molds need to be greased with oil and sprinkled with semolina or crackers. This simple step will help you easily get ready-made cheesecakes.

Place the dough into each mold, filling half of it.

Place a teaspoon of berry puree (you can do without it, and if you are not on a diet, add a piece of chocolate or toffee).

Cover the filling with curd dough. Fill the mold almost to the top. Cheesecakes rise during baking.

Bake cheesecakes in a preheated oven at a temperature of 180-200 degrees for 20-25 minutes. Cheesecakes can also be baked in a slow cooker by simply placing the molds on the bottom of the bowl.

Sprinkle the finished ones with powdered sugar, garnish with berry puree, and pour with honey (if you didn’t use sugar). This simple recipe for dietary cheesecakes in the oven is now in your cookbook.

  • If for some reason a person is prohibited from eating flour (following a protein diet or adherence to healthy eating), then this ingredient can be replaced with semolina. These dietary cottage cheese pancakes in the oven are prepared according to the classic recipe. The only exception is that instead of flour, semolina and soda are used, quenched with lemon juice. The last ingredient helps make the dish very tender.

To prepare cheesecakes from semolina, eggs and cottage cheese, these ingredients are mixed and left for 10-15 minutes so that the semolina swells. Then soda is added to the mixture and the dough is ready for cooking.

  • You can replace wheat flour in cheesecakes with oat bran or flakes. But from the last components you will need to make flour using a coffee grinder. Otherwise, the cheesecakes will turn out very “rough”.
  • Another option for replacing wheat flour is cornstarch. But it is worth remembering what to use potato starch prohibited as it contains too many calories.
  • To prevent the curds from burning during baking, you can put a little butter in the dough.
  • You can dilute the taste of cheesecakes with the help of dried fruits that are not harmful to your figure. Raisins, dried apricots and prunes go well with cottage cheese. You can also add pre-cut apples, apricots or bananas to the dough. The calorie content of the product will not change much from these ingredients, but the taste of the cheesecakes will be amazing.
  • For chocolate lovers, you can add 1 tbsp to the dough. l. cocoa. So with the addition of this ingredient, ordinary classic cheesecakes will turn into chocolate cheesecakes.
  • To prepare cottage cheese, choose low-fat cheese. If, however, this rule was not followed and the cottage cheese for the dish turned out to be fatty, then you should add more dry ingredients. They will help hold the dough together and absorb most of the moisture from the curd.

Hello, dear blog readers. Today we will prepare low-calorie cheesecakes. I am against cottage cheese in my diet. It adds mucus to the body and increases pH.

But I still can’t give up completely. I don’t drink milk, but I won’t refuse cheesecakes. What am I telling you?

You have already read about this on my website in the article ““ . If you haven’t read it yet, be sure to read it.

But, for the purity of the experiment, in order to write about what I know for sure and have tried on myself, I will break down the cheesecakes into their components. Let's start with the main ingredient in the recipe. This is cottage cheese. A product with controversial qualities and unproven value.

Cottage cheese, an important source of protein, is obtained at home.

One of the first complementary foods for infants is tender cottage cheese. Of course not the one they sell in stores: glazed and with palm oil in the composition. Mommy makes high-quality cottage cheese herself.

To get good cottage cheese, you need to make it from high-quality milk. For 1 liter of milk add 2-3 tablespoons of sour cream or half a glass of kefir.

Heat the milk over low heat, stirring it. When the milk temperature reaches about 60 degrees, stirring should be completed.

At this stage, the milk begins to sour and collects at the top of the pan. It is necessary to wait until all the whey is at the bottom and the protein clots are at the top.

Under no circumstances should the whey be allowed to boil. The cottage cheese will then turn out dry and spoiled.

Remove the pan from the stove and let cool. Using a spoon, carefully collect the sour protein mass into a sieve or colander covered with gauze.

In about an hour, the curd mass will be ready. The quality of the curd directly depends on the quality of the milk. From 1 liter of milk you get approximately 150-180 g of cottage cheese.

Cottage cheese dishes.

If you exclude cottage cheese from your diet altogether, life may seem tasteless. In a balanced diet there is a place for salads with the addition of cottage cheese, and cottage cheese with berries.

Even cold fermented milk soup with cottage cheese can be included in your summer menu.

And one friend made a cake for her birthday. I did not expect such a step from a devotee of fitness and healthy eating. It turns out that the cake is low in calories.

I already gave you the recipe, if you forgot, look at the link in the article ““

Recipe for classic cheesecakes.

The recipe for classic cheesecakes contains cottage cheese, eggs, flour, sugar and salt. Each housewife has her own proportions. I'll give just one example:

  • cottage cheese - 250 g (pack);
  • egg - 2 pcs;
  • flour - 4 tbsp. spoons without a slide;
  • sugar - 2 tbsp. spoons without a slide;
  • salt - a pinch.

All components are mixed. A sausage with a diameter of about 6 cm is rolled out of the curd dough on a board dusted with flour.

Cut into washers 2-2.5 cm long. It turns out 6-8 pieces. Each puck is coated in flour, then. Fry in a hot frying pan in sunflower oil for 3-4 minutes on each side.

Personally, I do it a little differently: I put one egg and don’t add any salt or sugar at all, but I add half a cup of raisins. And instead of white wheat flour I use whole wheat flour.

How to change a recipe to make it dietary.

This dish can be made low in calories with a few simple tricks.

  1. Reduce the number of eggs in the recipe or eliminate them altogether.
  2. Reduce the amount of wheat flour or replace it with another product that has a lower glycemic index.
  3. Reduce the amount of sugar.
  4. Add components that replace cottage cheese with less calorie and more healthy fruits or vegetables.
  5. Change the way you prepare cheesecakes. Replace frying in a frying pan in fat, steaming, baking in the oven or slow cooker.

Let's look at how these culinary tricks are used in specific recipes and reduce the calorie content of a dish and make it dietary.

Recipes for dietary cheesecakes.

Diet cheesecakes can be made if you replace part of the cottage cheese with carrots, pumpkin, zucchini or grated apple.

It is irrational to use a blender, as the vegetables will “flow” and good test it won't work. By the way, if you prepare cheesecakes with the addition of pumpkin or carrots, they may not be sweet at all, but salty. Add more chopped herbs and you will have an excellent second course.

Cheesecakes without eggs

Reducing the eggs in the recipe to 1 pc. per serving will not change the structure of the dish at all. In general, you can do without eggs only if you don’t turn the cheesecakes in the pan.

Otherwise, the dough will not stick together and will crumble. You can use only protein - this will reduce calories, but will make the curd pancakes less fluffy. This might help baking soda or beat the egg whites into a thick foam before using.

Cheesecakes without flour

When white wheat flour is replaced with another filler, the quantity will also have to be changed. For a pack of cottage cheese (250 g), 2 tablespoons of semolina are enough.

Only in this case, the mixture for the cheesecakes should stand for about half an hour for the semolina to swell; the cheesecakes with semolina will turn out very crumbly.

If you grind oatmeal in a blender, then this oatmeal “flour” should also absorb moisture from the recipe ingredients. This requires additional time. It is not recommended to bake immediately.

Replacing wheat flour with rice flour allows you to avoid eggs altogether. But you should know that there is a lot of mucus in there, just like white rice. In this regard, whole grain and corn flour are healthier.

Cheesecakes in the oven

If you leave classic recipe cheesecakes, but if you bake them on a baking sheet in the oven, the food will become healthier and more dietary. The golden brown crust will remain, but it will come from caramelizing the sugar in the heat, and not from frying the proteins in oil.

If the dough turns out a little liquid, then it is better to bake it in molds, like muffins. This happens when the cottage cheese is dietary (sold in tubes) or you made it yourself and it has not completely settled.

When the dough is thick, bake on paper. It doesn't need to be lubricated with oil at all.

In a slow cooker, steamed

Steaming reduces the visual appeal of curds. They become white, without a golden brown crust.

For those with liver disease, this may be the only option. And salty cheesecakes filled with carrots and herbs look very bright after cooking.

The option with a multicooker is interesting because it can be used to cook both by steaming and in baking mode. So your favorite crust will remain with you.

What do we eat low-calorie cottage cheese with?

Syrniki are usually eaten with sour cream or whipped cream. Offering high-calorie sour cream and cream along with dietary cottage cheese products for weight loss is simply blasphemy.

You can eat cheesecakes just dry, but it’s not interesting. A tasty, healthy dish should also be beautifully served.

A wonderful sauce for cheesecakes can be made from fresh berries or fruits. To do this, puree 250 grams of fresh berries or peeled fruits with a blender.

For sour foods, add a tablespoon of honey. Sweet ones can be left with natural taste. You can decorate the dish with mint leaves when serving, or you can grind the mint in a blender along with the berries. Place a few whole berries on a serving plate.

In the off-season, you can make jelly sauce from frozen berries. After defrosting, these berries will give more liquid.

To prevent the sauce from spreading too much, make a light jelly using gelatin or agar-agar. You don't want the jelly to harden into jellies. The sauce just needs to become jelly-like.

Ingredients for frozen berry jelly sauce:

  • 250 grams of berries;
  • ¼ teaspoon agar-agar;
  • cold water for soaking - 100 ml.

Preparing jelly sauce:

  1. Soak agar-agar in cold water for 1 hour.
  2. The berries must be thawed. If you haven't prepared them yet, now is the time to do so.
  3. Grind the thawed berries into a puree using a blender or passer. Add honey or sweetener if the berries are very sour.
  4. After an hour of soaking, heat the water with agar-agar to a boil, stirring constantly with a whisk.
  5. As soon as the water boils, immediately remove from heat. Pour the berry puree into this pan, continuing to stir the mixture with a whisk. The sauce will immediately become jelly-like. Let it cool or use it warm - it's up to you.

Important: You can’t do the opposite, pour agar-agar into the puree.

Now that the dish and the sauce for it are ready, you can start tasting... Stop! But we have not yet considered the question: when, at what time, is it better to eat cheesecakes? When will this dish bring maximum benefit and minimum harm?

Place of cottage cheese products in your menu.

Since childhood, many people have associated the aroma of cheesecakes with Sunday breakfast. Don't change traditions. Eat cheesecakes, cottage cheese and other dishes with cottage cheese in the morning.

Or at least in the first half of the day. During the day, the protein will be processed and not deposited as excess on your figure.
