But to be honest, it’s incredibly simple and very quick to prepare, and the result is not only no worse than store-bought, it’s a hundred times tastier than any popular bakery. Nowadays all kinds of flour are sold, and for making bread there are exactly 30 types. If you cook with it, I think that the bread will turn out even better and tastier, since it already contains all the necessary ingredients for the most delicious and beautiful bread. But mixed wheat and rye also turned out wonderful, at least my family asked me why I buy ready-made if homemade turns out much tastier.

Our whole family has been dreaming of giving up store-bought bread for a very long time. I won't go into detail about why. In short: yeast baked goods are very harmful to health, and factory-made yeast-free bread does not inspire confidence in us (we have repeatedly heard from various sources that it contains no more than 50% flour, the rest is baking powder, that in production the bread is colored so that it has attractive color, and everything else in the same spirit).

At one time (before giving birth, when I had a lot of free time) I baked homemade yeast-free bread with hop sourdough, which I myself made from hop cones. But the whole process from start to finish took several days, and if as a result the dough did not rise well, which sometimes happened, and the bread was not baked so well, it was a shame. Then I tried other recipes: sourdough bread made from sprouted wheat grains, rye sourdough bread (I always made sourdough myself), but I couldn’t boast of great success in my experiments. For many months (even more than a year), I left this matter, and we returned to store-bought bread without yeast, which, of course, cannot be compared in taste to homemade loaves.

And this fall, a friend told me a very simple recipe for bread made with whey (or kefir) and soda, which is easy and quick to make. Since then, we practically do not eat factory-made loaves. For what? After all, in just 30 minutes (from the moment of mixing the ingredients until the bread comes out of the oven), we have hot, fragrant and very healthy bread on the table!

For one loaf of bread you need 350-500 ml of cow or goat whey or kefir (kefir makes bread heavier). Where can I get the serum? There are several options. If you make paneer cheese at home, the whey from it is suitable for baking. If you make cottage cheese at home from homemade kefir, cottage cheese whey is ideal. If you whip your own butter from homemade sour cream, the remaining whey will also be good. As a last resort, you can find a woman at the market who brings homemade dairy products to the city for sale, and ask her to bring cottage cheese whey for you. It will cost pennies! In the village they give me serum without any money at all, because... housewives do not use it and pour it out for the animals to drink. Well, or as a last resort, if you can’t get whey, just take kefir, as I already wrote above.

So, pour the whey into a separate container. In a large bowl, mix flour (take 600-700 grams first, then add more if you need anything), 1 teaspoon of quicklime soda without top, a pinch of salt, a few tablespoons or even a cup of bran and/or rye flour. Bulk ingredients must be mixed together in a bowl separate from the whey so that the dough rises better later. If you want, you can add seeds, seeds, spices to the future bread - you will experiment later. When the dry ingredients are mixed, pour the whey or kefir into the bowl and mix well. The dough should be very thick, almost in one lump, but it will still stick to the spoon and hands.

The test preparation process takes me about 10 minutes. The bun is baked in the oven for another 20 minutes. Grease a baking sheet with vegetable oil, spoon the dough onto it (I don’t put the dough in a mold, but put it on the baking sheet in the form of a thick, large “pancake,” because I like it that way) and bake at 240 degrees. Do not open the oven door so that the heat does not escape; watch the bread through the glass, but focus more on the time.

After 20 minutes, the kitchen will be filled with the wonderful smell of bread... This will be a signal that the loaf is ready. You can leave it in the oven, or you can take it out and let it cool on the counter. Serve for breakfast, lunch or dinner, or eat as a separate dish. For us, one portion of bread usually goes away in a day, but the bread is so easy to prepare that I am happy to bake it fresh every day.

  • Wheat flour - 3 cups,
  • Rye flour - 0.5 cups,
  • Bran - ¼ cup,
  • Sour cream – 1 teaspoon,
  • Salt and sugar 1 teaspoon each.

How to make whey bread without yeast

First you need to prepare the bread starter. To do this, pour the whey into a saucepan and leave it in a warm place for a day. Then add sour cream to the whey, mix and leave for another 12 hours.

After this, you need to knead the dough from the resulting starter. To do this, the flour should be sifted and mixed with bran, then added to the whey, after dissolving salt and granulated sugar in it. The dough should be kneaded in the evening to allow it to proof properly.

  • Butter or vegetable oil - 1.5 tbsp. spoons (I have fragrant mustard oil),
  • Salt – 1.5 teaspoons,
  • Powdered milk – 2.5 – 3 tbsp. spoons,
  • Granulated sugar – 1 tbsp. spoon,
  • Wheat flour or a mixture of several types of flour – 520 grams,
  • Raw yeast – 20 grams (can be replaced with 1.5 tsp of fast-acting yeast)

Cooking process:

If you are using a recipe with fresh compressed yeast, proceed as follows. The whey needs to be heated and then the raw yeast should be dissolved in it and the mixture should be poured into the bread machine. Then add warm melted margarine or butter, salt, granulated sugar, milk powder, which must be mixed with pre-sifted flour.

In our step-by-step photo recipe for whey bread, dry fast-acting yeast is used (Saf moment and Voronezh yeasts have proven themselves very well).

Then reduce the temperature slightly (to 180 degrees) and hold for another twenty minutes. Then the finished hot bread, cooked with whey, should be left to cool, covered with a towel.

  1. Flour - 0.5 kg.
  2. Whey - 0.3 l.
