In Thailand, bananas are very cheap, very tasty and are usually sold in huge bunches at once. We always have a lot of them. Often we simply don’t have time to eat so much, and bananas here spoil quickly. 2-3 days and they are rotten, another day or two and they need to be thrown away. They are not stuffed with chemicals here so that they can be stored in the refrigerator for weeks, so they must either be quickly eaten or something urgently done with them.

Overripe bananas are best used in baking, and we love baked goods. My husband and I drink tea with something tasty at least 2 times a day. Whenever possible, I try to cook delicious food myself, which is why we were looking for a house with an oven and kitchen appliances. Baking tins are a problem in Thailand and can sometimes be hard to find, but larger stores usually have them. You can also use saucepans without plastic handles or a rice cooker pan for these purposes.

So, what to cook? If you need something simpler, then I make different cupcakes. I choose recipes depending on what products are available and what I want to get. Here is one of the simple and favorite recipes:

4-5 overripe bananas,
2 eggs
0.5 cup sugar (if bananas are not very sweet, then a little more)
100 g sl. oils,
10g baking powder (you can take 3-5g baking soda and quench it with lemon juice or vinegar)
1.5 cups flour

Grind bananas in a blender. Add sugar, eggs and melted butter, mix well, I do this directly in a blender. Then add flour and baking powder and mix. You can also have vanilla sugar, raisins, prunes, oatmeal and whatever you want. Place the dough in a greased mold (if the mold is silicone, there is no need to grease it). I used the inner bowl of a rice cooker since I didn't have a muffin tin. Place in the oven and bake for about 40-45 minutes (if making muffins, then 20-30 minutes) at 180 degrees. If you are expecting guests or simply have time, you can sprinkle the finished cake with powdered sugar or pour chocolate icing with nuts or something else, but I didn’t do anything, we eat it well and quickly. I also really liked the recipe for Brazilian banana pie. It is even tastier and more tender than the previous cupcake. Even my mother, who is on a diet, could not resist. We will need:

1.5 cups flour,
1.5 cups cornstarch,
1.5 cups sugar,
1 packet of vanilla sugar (optional without it),
1 tbsp. l. baking powder (I took 1/3 tbsp of baking soda, slaked with lemon juice, you can also use vinegar),
200 g butter,
3 eggs
1 glass of milk,
6 bananas (I took both 4 and 8, depending on the situation)

Mix flour, starch, melted butter, sugar and slaked soda and get a dough in the form of bread crumbs. Grease the mold with oil (we have a large baking sheet, I used it instead of a mold, the cake turned out thinner than the original, but no less tasty). Pour in half the dough, distributing it evenly. Cut the bananas in half lengthwise or into 3 parts if there are not enough of them. Place it on the dough. Sprinkle the remaining dough evenly on top. Beat the whites and yolks separately. Pour the whipped yolks into the whites, mix gently while gradually pouring in the milk. Pour this mixture over the pie and bake at 180-200 degrees for about 30 minutes. Cool (although we rarely manage to wait until it cools) and cut into portions. Cold tastes better. This makes a pie like this:

Maybe some people still think that these fruits can only be eaten fresh by peeling them. However, this is not true; from an overseas miracle you can prepare a lot of tasty and healthy dishes that will decorate your holiday and everyday table. We’ll talk about that in our material. Ingredients: 2 large and very ripe bananas (soft inside), half a glass of sugar, salt on the tip of a knife, a glass of flour, three eggs, a glass of milk, a couple of tablespoons of vegetable oil.
