Sometimes you want to turn breakfast into a real holiday. What's the easiest way to do this? Cook something unusual, not banal. Such a dish could be muffins with ham and cheese, which I suggest preparing. They turn out delicious, beautiful and will decorate any breakfast. Muffins prepared according to this recipe can also be an appetizer if you want to surprise your guests with something. Get to work, friends!

To make ham and cheese muffins, we will need:

  • Ham - 200 g
  • Cheese - 200 g
  • Milk - 1 glass (250 ml)
  • Egg - 2 pcs.
  • Butter - 100 g (softened at room temperature)
  • Flour - 2 cups
  • Baking powder for dough - 1.5 teaspoons
  • Fresh herbs - 1 bunch (I used green basil and dill, you can use thyme, rosemary, etc.)
  • Sugar, salt - 0.5 teaspoon
  • Ground pepper
  • Muffin tin (and paper cups)
  • Butter and semolina for greasing the pan (you can use vegetable oil)

How to make ham and cheese muffins

  1. Sift the flour with baking powder and salt into a cup, where we will make the dough and mix all the ingredients for the muffins. Add ground black pepper. Finely chop the fresh herbs, add to the flour and mix thoroughly.
  2. Cut the ham and cheese into cubes and add to the cup. Mix. Make a small depression in the center to add the egg-milk mixture.
  3. Separately, beat eggs with sugar in a cup, add milk and beat thoroughly until smooth. Pour in a thin stream into a cup with dry ingredients, mix thoroughly with a spoon or wooden spatula so that there are no lumps.
  4. In a separate bowl, beat the butter with a fork until it becomes fluffy. Add butter to our muffin dough with ham and cheese, mix thoroughly, not for long, so that the dough is airy.
  5. Preheat the oven to 190C. Preparing the muffin pan. If you use special paper molds for muffins, then the mold should be slightly greased with vegetable oil. I didn't have any molds, so I just greased the mold with butter and sprinkled it with semolina. Place the dough into the mold. Please note that the dough will rise, so do not pour too much dough. Each muffin can be topped with capers or half an olive. Now put the baking dish in the oven for 20-30 minutes.
  6. The readiness of ham and cheese muffins can be determined by their beautiful golden color and wonderful aroma that will spread throughout the kitchen. Usually it is 25-30 minutes. You can check readiness in the classic way - using a toothpick to pierce the muffin. If there are no traces of dough on the toothpick, the muffins are ready and you can remove them from the oven.

The finished muffins must cool before you remove them from the pan and serve them. It is better to serve muffins with ham and cheese warm - this way their taste is revealed to the fullest. If they have cooled down, you can always reheat them in the microwave.

Then add salt, sugar and ground black pepper to the softened butter.

Beat the butter and spices with a mixer for 3 minutes.

Add eggs to the resulting butter mixture one at a time, whisking constantly until smooth.

Then add approximately 100 grams of sifted flour and baking powder.

Mix at low speed of the mixer and pour in 60 ml of milk, mix again.

Then add the remaining flour and milk, mix well at low speed mixer until smooth. The dough will turn out very airy and tender.

Cut the cheese into small cubes.

Also cut the ham into small cubes.

Add cheese and ham to the dough, mix well with a spoon.

Divide the dough into the molds, filling them 2/3 full. I used paper inserts. I made 12 ham and cheese snack muffins.

Bake snack cakes in a preheated oven for about 30 minutes at 200 degrees. The cupcakes will rise while baking, but will fall back a little as they cool. Warm muffins with cheese and ham can be served. I decided to decorate them with cottage cheese, sausage and vegetables.

I used cream cheese to decorate the cupcakes.

First remove the cheese from the refrigerator for about 1 hour, then transfer it to a pastry bag with a shaped nozzle.

Sometimes you want to surprise your loved ones with an unusual breakfast, the preparation of which will take a minimum of time. Such a unique dish could be cheese muffins with ham and egg.

The muffins turn out very flavorful, tender and quite filling. They can be served for breakfast with a cup of tea or used as a snack throughout the day.

Let's prepare the necessary products for the muffins.

Prepare the dough. In a container, combine finely grated cheese, yogurt (without additives) or kefir, dried garlic, sugar, pepper and salt. Pour in vegetable oil and mix well.

Add sifted flour and baking powder. Mix thoroughly.

The dough turns out to be quite thick, a little thicker in consistency than pancakes.

Add finely chopped ham and herbs and mix. The dough is ready.

I will bake muffins in silicone molds. Bottom diameter - 3.5 cm, top diameter - 7 cm, height - 5 cm.

Place 1 heaped tablespoon of dough into each mold. Using a teaspoon, spread the dough along the sides of the mold, making a well in the center for the egg.

Break the egg into a small bowl.

We use medium-sized eggs, weighing 40-45 g, so that they fit into the recess. If the egg is large, you can remove some of the protein.

Carefully pour the egg, being careful not to damage the yolk, into the well. In this way, fill the remaining molds with eggs.

Carefully place the remaining dough on top of the eggs. If not all the tops of the eggs are completely covered with dough, it’s not a big deal.

Place the muffin tins in a preheated oven. Bake at 210 degrees for about 15-20 minutes.

Cool the finished cheese muffins with ham and egg a little, then serve.

  2. Grate a piece of cheese or cut it into very small cubes.

  4. We chop the greens. I take dill, parsley and spinach, which can be replaced with sorrel, green onions or wild garlic.

  5. Place cheese, herbs and ham in one bowl and mix.
  6. Melt margarine or butter in a metal bowl.
  7. Beat the eggs and salt a little. I use a whisk for this, but you can use a blender or mixer.

  8. Pour the required amount of kefir or milk into another convenient container.
  9. Combine, stirring, kefir with beaten eggs and margarine.
  10. Using a sieve, sift the flour into the liquid mixture.
  11. We extinguish the soda.

For this I squeeze lemon juice, but you can use any vinegar.

300 g flour;

50 g hard cheese;

150 g ham;

250 g sour cream;

60 g melted butter.


We measure required quantity flour. You can and should sift if you doubt the quality. If the flour is proven and good, there is no point in playing with the sieve. Add salt and soda there - this is the dry part of the muffins. If you want to add your favorite dry herbs or seasonings to the dough, you can do it now.

Mix flour, soda, salt - carefully and inspiredly: given that the muffin dough needs to be prepared quickly and effortlessly, you only have one chance to carefully distribute the salt and soda throughout the baked goods, and this chance is now.


Cut the ham into beautiful cubes.


Grind the cheese into the same pieces as the ham.


Add diced ham and diced cheese to the flour mixture. Mix.


Take another saucepan and melt the butter.


Add sour cream (my homemade one is quite thick).


Beat in the egg. Mix.
