“No flour. No oil. No sugar” is the first thing that catches your eye when you visit the website of the online confectionery Bezmuki. You immediately catch yourself thinking: “I wonder what they use to make all these cakes and pastries?” By the way, the founder of the project, Anastasia Talyshkina, tested her cakes on herself - in 3 months without dieting or suffering, she lost 16 kg. The Talyshkins, entrepreneur spouses, told the portal DK.ru about what is included in “dietary” desserts and how their production works.

According to Anastasia Talyshkina, who conceived her confectionery shop two years ago and, with the support of her husband Anton, brought the project to life, it all started with a hobby.

After giving birth to a child, Nastya was looking for a way to get in shape without giving up sweets, without which she couldn’t imagine her life. On the Internet, she came across the popular low-carb diet of the French doctor Pierre Dukan and decided to try to make a dessert from the products allowed by this food system. The inspiration passed quickly: it turned out that preparing dietary desserts is not so easy. At first, Anton was assigned the role of chief taster, and he recalls that his wife’s first culinary experiments were invariably given the verdict “inedible” - the dishes were thrown into the trash. But after a couple of weeks of torment, alternative desserts could already be eaten.

“The hand gets used to any ingredients,” says Nastya. - Over time, we developed our own tricks, our own technologies. I began to understand how to use alternative products, combine ingredients and dose them, and my own recipes appeared.”

By the way, after following the Dukan diet for three months, Nastya lost 16 kg. “This happened without much physical effort or pain, I ate cakes almost every day. This wasn’t the first time I tried to stick to a diet, but before I always failed because I was so desperate for sweets,” she says.

Cravings for sweets

After working on several dishes that became signature dishes, Nastya created a group on the VKontakte social network and began accepting orders for dietary cakes and pastries. It turned out that this topic is in demand: healthy eating is in fashion, and people began to pay more attention to what they eat, monitor calories and food composition.

The market offered practically no sweets that would fit into this format. The group included athletes, women breastfeeding, wrestlers overweight and those for whom a strict diet is prescribed by doctors, in particular, people with diabetes and gluten allergies. According to open statistics, in Yekaterinburg alone the potential audience of the project is almost a fifth of the population, about 200 thousand people.

When the “hobby” grew into a “business” and her hands were no longer enough, Nastya decided: it was time to open a workshop. At this stage, Anton joined the development of the project. He already had experience in business - his company was engaged in electrical work - and if at first he only helped with advice, then at some point he realized that he, too, was more interested in being in the confectionery business: here the return on what you do is much greater.

In March 2015, the Bezmuki project acquired its first workshop. Moreover, it coincided that this workshop became the first in every sense - there was no professional production of “light” desserts either in Yekaterinburg or throughout Russia.

“We communicate with people who are involved in this area and are aware of what is happening in the market,” the entrepreneurs share. - Dietary sweets are also prepared besides us, but basically this does not go further homemade baked goods. Production facilities have just begun to appear in Moscow and St. Petersburg. And we are the only ones in Yekaterinburg: it’s hard not to notice our own kind in such a small city.”

Six months later, the Talyshkins received a Customs Union certificate for their desserts, and at the same time found a larger production site. Now we are looking again - the volume of orders is growing.

“It took a little more than 600 thousand rubles to launch the first workshop. This is taking into account the fact that we rented a premises ready for food production: it already had the necessary repairs and basic equipment,” says Anton Talyshkin (he now handles all financial issues, working with suppliers and logistics). - If we calculate the costs for the first and second workshops, then in total we invested 1.1 million rubles. All investments have already paid off."

The brand's products are presented in several locations (for example, in the Sila Voli shopping center aimed at athletes), but the main concept of the project is an online confectionery: all desserts are prepared upon pre-order.

“Since we only work to order, we never have an even load,” says Anton. “We accept from 20 to 35 orders per day, on average per month - 350. At the same time, regular customers make up only 10% of the total.”

Nastya adds: now the main task is to increase the number of regular customers who order dietary baked goods consistently from two to four times a month, and a lot of work is being done in this direction.

In particular, entrepreneurs began to interview everyone who contacts them for the first time. “The market is new, and there are a lot of curious people,” says Anton. Previously, we have never been interested in why people want to try an alternative dessert. As a result, we sometimes received feedback that was full of disappointment. There were, for example, situations when people had a wedding or anniversary, no one had ever been on a diet, had never eaten sugar-free baked goods, and, of course, they didn’t get what they expected,” says Anton.

Over time, the couple began to take orders more carefully and asked why a person wanted to buy a diet cake.

“It doesn’t occur to anyone to go to the store to buy something for tea and head to the shelf with goods for diabetics,” Nastya shares. - We have learned to recognize our clients. If a person called after seeing beautiful picture, and topic healthy eating is not interested, we are ready to redirect him to other confectioners or select something from our line that is as close as possible to traditional baked goods.”

Today the confectionery has eight people on its staff. At the initial stage, the team recruited people with “bright eyes” who were hooked by the concept of the project. They had no experience in the confectionery business, but they had a desire to learn. “What do you know about us” is a question that to this day allows us to weed out those who came simply to receive a salary.

But now Bezmuki hires only professional confectioners. “Staffing is always a problem in any business. And given our specifics, we have to look for people for a very long time. Thus, we noticed that it is very difficult to retrain confectioners who are accustomed to working with ordinary ingredients - not everyone can change their minds,” say the Talyshkins.

Nevertheless, there are masters ready to experiment. Having experienced a slight shock from the fact that they will have to bake cakes without cream and butter, they get involved and begin to come up with product combinations and texture combinations themselves: fortunately, the topic is new, and there is huge scope for development.

Now the Bezmuki assortment includes more than 100 items: these include cakes, pastries, pizza, bread, as well as cookies and candies. The calorie content of desserts is from 60 to 100 kcal per 100 grams (for traditional baked goods - 400-600 kcal).

“The base of our desserts is the list of approved Dukan products: wheat and oat bran, they replace flour,” Nastya reveals her secrets. In addition, she learned how to bake biscuits from chickpea flour, which she prepares herself. The desserts also include low-fat dry milk and cocoa (1%), corn starch, various “superfoods” (plants and their fruits with a high concentration of nutrients) - goji berries and chia seeds.

However, many of these desserts taste similar to ordinary ones, and even appearance they cannot be distinguished at all. Nastya was trained at the Conditorium, follows trends in cooking and is very zealous about the design of her desserts.

“The main trend today is modern mousse desserts,” she says. - All social media filled with photographs of desserts with velor and mirror glaze. Confectioners experiment with shapes, combinations of flavors and textures. Desserts can be both sweet and salty, tender and crunchy. This trend is also moving into dietary baking. And although we are limited in ingredients, we already have several items that correspond to the concept of “modern dessert”. In general, there are a lot of directions in which you can move, and this is very inspiring.”

Preparation:
